An Oh, How Civilized Organic Matcha!

$ 46.00

A special collaboration between Mizuba Tea Co. and Oh, How Civilized by Jee Choe.
Our 30g tin of organic, first-harvest matcha is grown in the mountains of the Southern Japanese Alps in Shizuoka. The producer carefully refines a blend of cultivars year after year to achieve a specific umami profile that captures the essence of mountain tea.

Experience a deep, savory umami balanced by a persistent sweetness. Mountain teas are renowned for their feeling of fresh mountain air—a more buoyant, ethereal umami than the deep Uji varieties. The producer is obsessed with the idea of a "misty sweetness" that high elevation fog delivers, while still achieving that sought-after umami.

How to brew:

  • Warm your chawan tea bowl with hot water.
  • Place 1.5-2g (1 tsp) of  matcha into your chawan.
  • Add 1 ounce of 160ºF-175ºF water to the tea and make koicha (a thick paste).
  • Add about another 1.5-2 ounces of water.
  • Whisk with your chasen until the tea is fully aerated to make usucha.
  • Enjoy!

A Civilized Matcha Moment

There's no better matcha for Jee's perfect latte and drink recipes.

The powder is beautifully verdant, especially remarkable for an organic tea. The matcha is a mark of expert cultivation and processing as producing organic teas at such high elevation requires exceptional skill.

Add 1 oz. 160-175º F water. Work chasen (bamboo whisk) in a circle to make a paste.

Add another 2-4 oz. water and whisk the tea in an M-shape motion until frothy. Enjoy!

Stone Milled

All Mizuba matcha is stone milled in Japan. This time-intensive process leads to a depth of flavor not found in conventional teas.
