These raw vegan matcha green tea truffles are incredibly easy to make and are delicious! Dates are a great natural sweetener and also help these truffles stick together well… They also happen to be very high in fiber and minerals. Eat up! Raw truffles are the perfect gift for the holidays and are great healthy treat to have around the house.
Mizuba Tea Truffles by Summer Sanders
This recipe makes 8 to 10 truffles
7 dates, pitted
1 cup raw cacao powder
1/2 cup raw almond butter
1 tablespoon vanilla
1/2 teaspoon Celtic salt
Optional Toppings
Mizuba Matcha Green Tea Powder (as pictured)
Pink Rose Powder
Goji Berries
Cacao Powder
Crushed Nuts
Method
In a food processor add the pitted dates, cacao powder, almond butter, vanilla and salt. Blend until a textured flour forms. It may look really dry, that’s how it is supposed to look.
Lay some waxed paper or plastic wrap out and roll truffles they should be about 1 inch by 1 inch. Let your hands warm up the mixture. If it feels to dry, just work it like you would bread dough. Roll in the palm of your hands.
Once you’re finished, sprinkle with your favorite topping. See suggestions above. I used green tea matcha powder!
Store in a cool dry place.
