VEGAN COCONUT MATCHA GRANOLA RECIPE


In the same way, Nora’s Kitchen started, a lot of us enjoy making our own vegan granola at home, especially this matcha granola recipe! There’s just something special about the process and how the delicious granola smells waft through your entire home as it bakes. It’s almost nostalgic in a way, bringing you back to your senses and allowing you to explore freely within your own kitchen.

Since coffee is a love-hate relationship for me, I dabble between other sources of caffeine regularly which includes matcha. I wanted to create something that not only gave me energy from caffeine but came from natural sources of energy-inducing foods we acquire from protein or fiber. I wanted to do something a little different, but still make a simple snack to share. We decided to team up with another local business here in Portland, Mizuba Tea Co., to create a Vegan Coconut Matcha Granola anyone could enjoy. I’m a sucker for good matcha and let me tell you, this is some of the best matcha I’ve ever had. I love matcha not only for the flavor, but for the bursts of antioxidants it holds. Matcha green tea powder is great for weight loss, inducing calm energy, lowering cholesterol to help provide a healthy heart, increase brain power and support skin health. Matcha and granola go hand in hand for many reasons when it comes to keeping your body healthy, easily.

This Vegan Coconut Matcha Granola Recipe is the Perfect Combo!

This granola hits close to home since it contains a lot of ingredients we use for our own granola, but we switched some things around to bring out a sweeter flavor to pair with the matcha. We don’t enjoy super sweet granola because we think it should be your choice to add sweetness and build your food how you want it. However, since we kept the sugar low on this recipe, it will be perfect for you to add your favorite non-dairy yogurt (we always use CoYo, they are the best!), a milk alternative (we love Oatly! and Good Karma) or a sweeter fruit like blueberries/peaches to curb your sweet tooth.

This vegan coconut matcha granola recipe has a high protein and fiber count along with providing a low glycemic, no added sugar, zero soy and is gluten-free! We hope you enjoy it as much as we do.

 

Share your favorite homemade granola recipe with your friends for matcha green tea granola!

 

YOU WILL NEED:
  • 2 cups Gluten Free Rolled Oats
  • 1 cup large coconut flakes
  • 1/2 cup gluten-free oat bran
  • 1/4 cup ground flaxseed meal
  • 1/2 cup pistachios
  • 1/2 cup almonds
  • 1/2 melted (if not already) coconut oil
  • 1/4 cup organic maple syrup
  • 1/2 tsp organic rice protein powder
  • 2 tbsp organic culinary Mizuba Green Tea Matcha
  • 1/2 tsp salt
MAKES:

 10-12 servings

TIME:

 30 minutes

 
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. In a large bowl mix all dry ingredients, but leave rice protein powder on the side to mix with wet ingredients. Wash hands and hand toss.
  3. In a separate bowl mix all remaining ingredients including your rice protein powder. Whisk until smooth.
  4. Combine wet ingredients with dry ingredients and hand stir while slowly pouring into large mixing bowl. We like to use our hands, but if you don't want green colored fingers then use 2 large wooden spoons similar to how you would use tongs to mix all ingredients.
  5. Pour wet granola into a large glass tray or medium size sheet pan. Thin out granola until all edges are covered and there is an even single layer.
  6. Since we like to slow-roast our granola to bring out all the natural flavors in the nuts and oils, bake your first round for 15 minutes. Once timer goes off, pull out and toss granola with wooden spoons again then smooth out so entire pan/tray is covered like before. Bake your second round for 12 minutes.
  7. Let cool for 5-10 minutes and enjoy with a milk alternative or vegan yogurt. Since we kept the sugar low on this recipe, we suggest adding a sweeter fruit like blueberries or peaches to curb your sweet tooth.
