These cookies are: paleo, gluten-free, and *optionally* refined sugar-free
Ingredients:
Dry
⅓ cup + 3 Tablespoons coconut flour
½ teaspoon baking powder
¼ teaspoon salt
1 Tablespoon Mizuba Culinary Organic Matcha
Wet
⅓ cup unsweetened chocolate, chopped
2 ripe bananas, mashed
¼ cup coconut oil, melted
2 eggs
1 teaspoon vanilla extract
*Optional*: ⅛-¼ cup of coconut sugar
Method
Preheat oven to 350℉ and line a baking sheet with parchment paper.
In a small bowl, stir together all dry ingredients.
In a separate bowl, mix the mashed banana, coconut oil, eggs, and vanilla extract until combined and smooth.
Slowly add dry ingredients to wet ingredients. Once combined, fold in chocolate chunks.
Create 1 inch balls of dough with hands or cookie scoop. Use the palm of your hand to gently flatten each cookie.
Bake for 11-13 minutes and enjoy matcha magic!
